The aging of wine is single handed the most important and most complex process in winemaking. Without the ageing process most wines will maintain fermentation characteristics, yeasty odours, haze and cloudiness which to the consumer is less appealing

The winemaking process for centuries has been enhanced with the help of oak additions in the forms or barrels, casks and only recently inner tank wooden staves.

Sabella Vineyards has taken these century old techniques and modified them removing the steps which can inhibit wine making faults like oxidisation through manual handling of wine.

In our unique transformation of a well known and established practice in the wine industry Sabella Vineyards has turned the winemaking decisions around onto the consumer in deciding when a wine has aged enough on oak.

Each individual bottle of the Sabella Reserve Shiraz has been inserted with an oak block giving the wine a truly uninhibited chance to fully grasp all the benefits of aging on oak. The aging process and oak maturation still takes place, but it takes place entirely in a sealed bottle ready for drinking. Removing the process of storing wine in oak barrels for long periods of time and rather bottling wine when it has finished its secondary fermentation and allowing the wine to mature on its own accord ready for drinking is unheard of and unique in the wine industry. The wine makes contact with all sides of the oak block soaking up the flavours and transforming over time, a young wine into a full bodied complex bottle of goodness.
